Fettuccine with Peas, Ricotta & Mint

Serves 2 | Preparation time 5 minutes | Cooking time 10 minutes
WHAT YOU’LL NEED
1/2 packet fettuccine
1-2 Tbsp olive oil
1/2 cup frozen peas
Handful fresh snap or mage tout  peas
1/3 cup ricotta cheese, roughly torn
1Tbsp chopped fresh mint
1/2 fresh lemon
S + P

WHAT TO DO
1. Cook the pasta according to packet instructions, drain and set aside

2. Meanwhile, microwave the frozen peas on high for 3-4 minutes until cooked through. Drizzle the pasta with olive oil, toss with the peas, ricotta and mint. Drizzle with a squeeze of lemon juice, and sprinkle generously with salt and freshly ground black pepper.

*You could swap in feta for ricotta
*You could add bacon

This is so amazing in it’s perfect simplicity. I immediately mailed the link to all my cooking friends. I am going to try this with crispy fired chorizo to make it warm for the winter. I love the freshness of this dish. Brilliant! 🙂

Hi Chris, I went to sleep on Monday night thinking that I should have added in there to add chorizo for a meatier dish, so you read my mind, and hope you enjoy it 🙂
