Almost Instant Chocolate Mousse

“You know what? SOD IT. Yip. You heard me, you beastly sub-conscious calorie counter you”

It’s true, I usually pride myself on pretty healthy and reasonably calorie-conscious cooking, with everything carefully thought through, all neat and tidy and just so. You know the type. Well that was then. And this is now. And now our lives have been loudly and happily interrupted by baby chaos, which has brought with it a merry stream of visitors.

Not least of which were two of our besties from Zimbabwe, Steed and Jenna, who I previously introduced to you via my Beijing Blog Post last year. They came to claim the crown of being Sophie’s Godparents, and Steed made it very clear beforehand what he expected to be on the the weekend’s menu. The list included, in no uncertain terms and amongst many others, chocolate mousse. Thankyouverymuch.

Given that I currently feel like I’m orchestrating a rather intricate juggling act, I needed something that was going to require the least input for maximum output. I needed the most bang for my buck, if you will. Enter Nigella and her kitchen fairy, domestic goddess, queen of indulgence-ness. And my trusty Nigella-App. And this gives you this gloriously rich and decadent ‘Instant’ Chocolate Mousse. See for yourselves…

Preparation time 5-10 minutes | Cooking time 10 minutes | Serves 4-6
WHAT YOU’LL NEED
150g mini marshmallows
50g soft butter (about 2 Tbsp)
250g good dark chocolate, roughly chopped
60ml recently boiled hot water
275ml double cream
1 tsp vanilla extract

WHAT TO DO
1. Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
2. Put the saucepan on the stove, medium heat and melt the contents, stirring occasionally. Remove from the heat and set aside.
3. Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until smooth.
4. Pour into 4 glasses/ramekins, chill and bring back to room temperature before serving.

*Serving suggestion: topped with fresh strawberries (or any berries) as shown.
