Grilled Vanilla Nectarines

I first came across this idea when we were out in the beautiful Cedarberg area north of Cape Town last weekend, in a little town called Wellington, to celebrate our friends John and Elle’s wedding. Elle was the perfect bride, beautiful and serene in her gorgeous white dress, and John the ever dashing groom. A very happy whimsical Summer-time evening was had by all.

The Sunday morning we went in search of brunch, as one does, and wound up at a very cute country restaurant, as you do in that part of the world. I ordered grilled nectarines on a banana pancake with a fruit coulis (drizzle), and it was delicious, though the nectarines seemed slightly more poached than grilled. So I decided to endeavour to make my own version when I got home. Which I duly did. And am now truly smitten.

You can add these to your morning granola with a dollop of yoghurt and a splattering of honey, or as a dessert with mascarpone on the side, or you can go right ahead and adorn any bed of salad greens with them, sprinkle over a little goats cheese, balsamic vinegar and some pecan nuts and you have yourself a rather sublimely summery salad.

Go wild.

Grilled Vanilla Nectarines
Serves 2 | Preparation time 3 minutes | Cooking time 5 minutes

3 ripe nectarines (or peaches), halved and pip removed
2 tsp muscovado or brown sugar
1 tsp vanilla

1. Pre-heat the grill
2. Place halved nectarines cut side up in an oven-proof dish, sprinkle with the sugar and vanilla and grill until golden, about 5 minutes
3. Remove and eat as you wish.
