Strawberry and Spinach Leaf Salad

Really this should read Strawberry, Blue Cheese, Pecan Nut, Avocado and Spinach Leaf Summer Salad, but that was too much of a mouthful – and I’d like to save mouthful allocations for actually eating this thank you. Everything about it is just right, the colours, flavour combinations, textures – it’s definitely my new fave. Perfection on a plate.

Taken from Seared Tuna Heaven that I shared with you a couple of weeks ago.

Serves 4-6 | Preparation time 5 minutes

WHAT YOU’LL NEED
1 medium bag baby spinach leaves, rinsed
250g strawberries, sliced however you like
Handful chopped pecans, you can toast them too if you like
Half cup crumbed blue or goats cheese (or feta would also work)

For the Dressing:
2 Tbsp olive oil
3 Tbsp balsamic vineger (I think red wine vinegar would also be delicious)
1-2 tsp honey

WHAT TO DO
1. Toss the spinach leaves, strawberries, pecans and goats cheese in a salad dish.

2. Mix the dressing and pour over just before serving.
