Honey-Roasted Sweet Potatoes

Any praise you wish to lavish on these beautiful honey-roasted sweet potatoes (and believe me there will be lots) needs to go directly to our friend Jenks, the man responsible for bringing us the revolutionary Seared Tuna I shared with you recently. They were a side dish in that post, but I have decided that they need a spot all of their own so that we don’t forget about them. They go wonderfully with almost anything, or just as they are. I recently edited this so that it’s that much quicker and easier for you.

Serves 4 as a side dish | Preparation time 5 minutes | Cooking time 20 minutes

WHAT YOU’LL NEED
4 medium sweet potatoes
2 Tbsp butter
1 Tbsp honey

WHAT TO DO
1. Pre-heat oven to 180C.

2. Rinse and scrub your potatoes, and cut them roughly into wedges. Microwave on high for about 7-8 minutes, until can be easily pierced with a knife. Meanwhile, pre-heat your oven to the grill setting.

3. In a small pot on the stove-top, melt the butter and then spoon in the honey and mix and then spoon it over the potatoes and toss well so that they are all evenly coated. Place on the middle shelf of your oven and grill for about 5 minutes, until the potatoes are lovely and golden.
