Applause for Peanut Sesame Chicken

There was very little conversation at our dinner table last night. We were both too busy getting acquainted with, and wallowing in, the glory of this, our NBF.

Dead Easy. Delicious. Done in 10. What more do you want?!

Serves 4 | Preparation time 5 minutes | Cooking time 5 minutes

1 packet rice/egg noodles
6 chicken breasts

For the sauce
3 Tbsp sesame oil*
1 large garlic clove, finely chopped
3 Tbsp soy sauce
6 Tbsp sweet chilli sauce
2 Tbsp smooth peanut butter
6 Tbsp lime juice (roughly 2 limes)

For the salad
1 red pepper, de-seeded and chopped
Half punnet broccoli, roughly chopped at stems
1/4 cup roughly chopped fresh coriander
1 Tbsp sesame seeds

1. In a good quality pan heat about 3 Tbsp olive oil, when it’s nice and hot brown the chicken

2. Meanwhile, in a separate medium-sized pot, cook the broccoli and noodles together for 4 minutes (roughly 300g noodles). Drain and set aside.

3. While the chicken, broccoli and noodles are cooking, whisk the sauce together.

4. Pour noodles into a warmed serving bowl, add the chicken and broccoli, drizzle with the sauce and then add the chopped red pepper, parsley and sesame seeds.

Serve immediately (preferably in warmed bowls that you’ve had in the oven on 50C or so).

Notes: The one thing with this recipe is that there are probably a couple of ingredients on the list that you might not have lying around in the pantry (particularly in a South African pantry). My suggestion is to go out and get them anyway. The sesame oil for example will make a lot more than one round.

*I would also recommend only adding the sauce just before serving, as otherwise it tends to get absorbed by the noodles and can become a bit dry, and you definitely don’t want that, the sauce is too good to waste!

*Leave out the chicken for a vegetarian option.
